Lego Mania



A birthday with two days of celebrations requires a cake with adaptability. With Upper Cut Cake gal, Jen's mind filled with toys these days, lego bricks seemed to provide the answer. One brightly coloured lego brick for each party (plus one extra to take home) did the trick. Happy birthday A!

(Sugar and dairy free pineapple and carrot cake sweetened with honey and flavoured with sweet cinnamon and mixed spice, covered in brightly coloured glace icing and matching fondant dots to complete the lego look)

  2. Thanks Sian so glad you enjoyed it! :-) The recipe is as follows:

    ¼ cup honey, ½ cup oil, 2 eggs, 1 tsp vanilla extract, 2 cups flour, 2 tsp baking powder, 1 tsp bicarbonate of soda,½ teaspoon salt, 1 tsp cinnamon, 1 tsp mixed spice, 1 cup grated carrot, 1 cup pineapple chunks,¼ cup pineapple juice

    1. Preheat oven to 175 degrees.
    2. Beat honey, oil and eggs together until well blended. Add vanilla. Add the dry ingredients. Don't over mix.
    3. Fold in carrots, pineapple (I put the chunks through the grater on the food processor to get smaller bits), and pineapple juice.
    4. Put into a tin and bake for 30-40 minutes or until a knife comes out clean. Et voila!

  3. Fabulous! Will definitely try it! Was going to bake this weekend but I've got stomach flu so will be confined to indoors... and of course unable to eat cake anyway :(
