Inspired to bake

Wanting to make sure that the family baker did not miss out on birthday cake this delicious apple and cinnamon cake was baked for Upper Cut cake gal Jen by her mum.

When she was a wee girl, Jen and her mum had a lot of fun baking and creating special birthday cakes together. This inspired and taught Jen to create the cakes she bakes today.

It hasn't all been plain sailing though. When she was about 8 years old, eager to bake a surprise birthday cake for her mum Jen sought out the help of her dad (who rarely bakes) to make a simple sponge with jam and icing. The two layers of sponge cake looked more like two biscuits and the water icing was too runny. The raspberry jam, made by Jen's mum, was the best bit.

Lessons that were learned that day were always use self-raising flour and never rely on dad for help with baking!

(2 layers of cinnamon cake sandwiched with cream cheese and creme fraiche sweetened with honey and juicy stewed apples and sultanas decorated with the same cream cheese topping sprinkled with an extra dash of cinnamon)
